Martin Simonart

Chef MARTIN SIMONART is the Chef-Patron of Le Château du Mylord in Ellezelles, one of Wallonia’s historic gastronomic landmarks. His career was built in several Michelin-starred houses in France and Belgium, including Le Bateau Ivre 2 Michelin Stars, L’Air du Temps 2 Michelin Stars, and L’Auberge des Templiers 1 Michelin Star, where he became Chef and Maître de Maison. In 2023, Martin returned to Belgium to take over Le Château du Mylord, succeeding Jean-Baptiste Thomaes and bringing a new contemporary energy to this emblematic house. His cuisine highlights local producers, seasonality and the Walloon terroir, with refined and sometimes daring contrasts. Martin is also a Maître Rôtisseur of the Chaîne des Rôtisseurs.
